Rooted in Waltham, Baked With Intention

La Castellana Bakery began as a small family operation with a simple conviction: that the best bread comes from real ingredients, unhurried technique, and a commitment to showing up every morning before dawn.

Today, we remain independently owned and locally rooted. Our bakers arrive at 3 AM. Our sourdough ferments overnight. Our pastries are folded by hand. We don't chase trends — we keep doing what works, year after year, for the people who live here.
